Hokkaido Ramen Santouka is a popular ramen brand originating in Asahikawa, Hokkaido. The brand is expanding primarily in North America and Asia, with gentle flavors and consistent quality as its key strengths.
This article introduces ab-out, the company that operates Hokkaido Ramen Santouka, including its business background, the appeal of the franchise, key menu features, and the support provided upon joining the franchise.

ab-out is a restaurant company founded in Asahikawa, Hokkaido, in 1988. Founder Hitoshi Hatanaka has upheld the guiding principle of “a bowl I’d want my family to eat,” while continuing to pursue uncompromising flavor and meticulous restaurant operations. Since launching its franchise business in 1995, the company has expanded its locations in Japan and overseas.
Its strategy emphasizes rapid expansion into untapped markets and new fields, driving growth through corporate partnerships and international expansion. With a solid management foundation that prioritizes quality control and customer satisfaction, the brand continues to grow as a trusted ramen chain originating in Hokkaido.

The signature pork bone broth is known for its mild flavor, drawing out rich umami while keeping the salt level in check, making it a broth you’ll want to drink down to the last drop. The brand pursues a gentle flavor that can be enjoyed by everyone, from children to older adults.
What supports this gentle flavor is a handcrafted method that has continued since the brand’s founding, in which the broth is simmered in-house every day. Franchise locations also follow this process closely, based on the headquarters’ recipes and training. One of the key appeals is that franchise owners can faithfully replicate the taste of the flagship restaurant in Japan.
The signature menu item that draws customers is the flagship Shio Ramen. The brand’s distinctive product, a creamy pork bone broth (paitan) base with pickled plum added, is loved worldwide, particularly among women.
In addition to this strong core, a wide lineup that includes Tokusen Toro-Niku, Shoyu, and Miso is also part of the brand’s appeal. Some locations also offer limited menus, so it is possible to develop menus tailored to regional preferences and customer tastes.
As illustrated above, it is essential to evaluate potential profitability based on cuisine characteristics and to ensure that operations are manageable. This website details the culinary features and support structures provided by each franchise brand. We also feature three carefully selected Japanese franchise brands based on regional suitability, so please be sure to review them as well.

Based on these reviews, it is clear that Hokkaido Ramen Santouka is popular for its rich yet mild, easy-to-drink broth and its satisfying portions. Many reviews praise the depth of flavor and satisfying heartiness of signature items such as the Shio Ramen and the brothless Tantanmen, and the brand appears to have many regular customers. In other words, the brand earns repeat customers through trust and consistent quality rather than flashy appeal.
Some customer reviews are shown below.
...The rich broth is so delicious that I can't help but eat it with rice. The restaurant’s original soupless tantanmen is highly recommended.
I stopped by for a solo lunch.
Although it’s a popular place, it wasn’t crowded since I arrived early. The shio ramen was rich and full-bodied, and paired with thick-cut pork, it was very filling.
I visited with colleagues from work during lunch break. I’ve been here several times before, and I like that they offer both ramen and tsukemen (dipping noodles), which lets me try a variety of options. I usually go for tsukemen on hot days and shio ramen on colder days, but since it’s a Hokkaido ramen shop, many people probably come specifically for the miso ramen as well. It’s not very flashy, but it feels like a place where regulars often come on their own. You can always count on Santouka.
